It might be the end of summer for us in the northern hemisphere, but it doesn't mean we don't want them thick sweaters to fit us just right. That's where this guilt-free dessert comes in handy: the fact that it's basically a crust-free apple pie, therefore delicious, won't hurt a bit either.
When I think about Italy, I think about the food - gelato, margherita pizza, olive oil and bread. Oh the bread. I must have gained 10 pounds in the three days I spent there; bread was a must at every meal.
So needless to say, I was excited when Tania's sourdough brioches popped up in my inbox. Because if anyone knows how to do brioche right, it's probably her. These would be perfect spread with jam at breakfast, and they can also be rolled out into croissants.
I love this simple "crisp for two" - so easy, versatile, healthy, and delicious. Here, made with the last of the season's peaches and blueberries, but of course it can be made with whatever fruit you fancy. I can totally picture this made with apples and cinnamon for the perfect fall breakfast. Or with fresh figs... mmm figs... :)
You can also make it gluten-free by using gluten-free oats, and vegan by subbing the butter for your favorite vegan spread or flavorful coconut oil.
So we're feeling a little nostalgic since it's Thanksgiving up in Canada and we're down here in tropical Mexico - so when I came across these pumpkin enchiladas I felt my two worlds coming together in a very delicious way! I love this easy flavorful recipe with it's delicately spiced pumpkin cream sauce - que riquisimo! :)
Today is Thanksgiving up in Canada, and it being the country I hail from, I get a bit nostalgic for the flavors and aromas that would always permeate the house on this particular day of the year. The highlight of Thanksgiving is of course the traditional Thanksgiving Dinner. There would be turkey and stuffing with cranberry sauce, and plenty of side dishes, but it was always the dessert that had me hold back from getting completely stuffed during the main course. For you see, I absolutely LOVE pumpkin pie.
Now, pumpkin pie is a wonderful thing, but there's another option which my wonderful partner and wife came up with a few years ago that takes the pumpkin out of the pie, so to speak, and it totally rocks my world. She calls it Patty's Pumpkin Pudding, but it's essentially a crustless pumpkin pie that will make your nose swoon and your taste buds soar with delight. Seriously, this stuff is like pumpkin nirvana.
I'm a big fan of healthy quick breads - and I have a sweet spot for zucchini bread - so when I came across this lovely loaf I was delighted. Baking Junkie (awesome name) makes hers with flavorful cinnamon and nutmeg, lightens it up by using egg whites and applesauce - and throws some oats into the mix for a bit of extra heartiness. And the star of the loaf, zucchini, keeps things moist. Yum!
These delectable cookies are La Fuji Mama's favorite fall cookies. She inherited the recipe from her mom, and I can see why they're so loved: pumpkin, cinnamon and chocolate - combined in a classic cookie format. Delicious!
