I made these vanilla almond cupcakes for one of my best friend's baby showers. Made with real vanilla beans, European butter, and the freshest ingredients, they have a dense pound cake texture and a distinct almond flavor. Another one of my finds during my quest for used cookbooks at antique malls over the weekend was Baking-Easy to make great home bakes. A 2001 publication. Again, antique? I think not! Skimming quickly through it yesterday in search of something fruity for the sunshine we have going on here today in Missouri. I found a Raspberry-Hazelnut Meringue Cake recipe that I just had to try. 7 ingredients total! I love a short ingredient list!

I love sugar cookies and I love lemons, so this recipe was a no-brainer. While making them, I loved how my kitchen smelled, like fresh lemons. I had a serious problem keeping my fingers out of the cookie dough because it smelled so good. I think I ate about 4 cookies worth of dough, which normally I don't do, but I couldn't resist with these.
