Nicole, the author of the A Dash of Compassion blog, has this to say about the awesome cookie recipe that she revamped from Fat Free Vegan to make use of oil rather than margarine, along with spelt flour and less sugar: "This original balsamic fudge cookie recipe is a healthy version of a fudgy, melt-in-your-mouth treat. It includes balsamic vinegar, which acts as an enhancer of the chocolate rather than a discreet flavour. It's amazing!"
