Crown cookies (ka'ak bel ajweh)

A traditional Easter semolina cookie from the Lebanese kitchen; the cookie is stuffed with a date paste and the dough is redolent of rose and orange blossom water. The shape of the cookies is symbolic of Christ's crown of thorns.
