Crustless Sweet Potato Goat’s Milk Pies

I'm a big fan of crustless pies. These flavorful little custard-like fall pies incorporate an often over-looked tuber that's sweet and rich in flavor, great for baking, and healthy too. As for these individual pies, Rachel will tell you, "They’re delicious! The sweet potato filling is velvety, nicely spiced, and satisfyingly dense. I love the smooth texture and melt-in-your-mouth quality of custard pie fillings."
Since being in Mexico I've developed a sweet spot for goat's milk too, as they use it to make caramel here, and it's lower in lactose than milk. Fancy meeting goat's milk in a pie!
