I absolutely LOVE figs - especially fresh ripe seasonal figs - yum! Maybe it's their subtle sweet flavor, or their high mineral content - whatever it is I know I can eat a ridiculous amount in one sitting.
La Fuji Mama spends a week experimenting with different kinds of fresh California figs, and comes up with these quick, easy, and impressive little tarts. She says: "Figs and cheese make a divine combination, and then if you add a bit of pork to the mix, whether it be bacon, pancetta, or prosciutto, you get the gold medal trio of savory fig combinations." I'm in!
