Victoria Sponge Cake

The Little Teochew Last weekend, I made a Victoria Sponge Cake. I have always loved the way it looks. There is something very rustic and feminine... and quintessentially English about it. In its simplest - and I believe, authentic - form, it's basically jam and cream sandwiched between 2 layers of sponge. But clearly, there is no harm adding some strawberry slices like I did. They give a fruity punch to an otherwise simple cake.
