Strawberry Scones


Strawberry season has begun here in the south, and I couldn’t be more excited. Strawberries are one of my favorite fruits. There is something so decadent about them, yet accessible. Dress them up, dress them down, they still taste good and there is nothing quite like fresh ones. To celebrate, I thought I’d make scones for my Thursday morning meeting with the strawberries that escaped my feeding frenzy. I have a basic scone recipe that I really like. It’s quick, simple, and only requires things you have around the house. It’s not too dry like scones can often be, and it just a little bit sweet. They go wonderfully with a hot cup of coffee, but are still moist enough that you can have them solo. I tend to add only about 1/3 cup of diced fruit to it because the scone batter is good enough to stand on its own. The fruit just adds a little something extra. I also dice the fruit because I think it incorporates into the dough more consistently and allows for more even cooking.

Victoria Sponge Cake


Last weekend, I made a Victoria Sponge Cake. I have always loved the way it looks. There is something very rustic and feminine... and quintessentially English about it. In its simplest - and I believe, authentic - form, it's basically jam and cream sandwiched between 2 layers of sponge. But clearly, there is no harm adding some strawberry slices like I did. They give a fruity punch to an otherwise simple cake.

Chocolate Cupcakes with Fresh Strawberry Buttercream Frosting

Moist chocolate cake (it's so light and fluffy and very very chocolaty!) topped with strawberry buttercream frosting. Fresh organic strawberries are pureed with yummy homemade vanilla bean sugar and added to sweet cream buttercream frosting. This is not (and never has been) your standard butter/powdered sugar frosting. This is an egg white and vanilla bean sugar - slowly cooked together to the perfect temperature and then beat until light and fluffy buttercream frosting! Sweet cream butter is added very slowly to ensure proper texture along with homemade vanilla bean extract. Then fresh strawberry puree is added until just perfect!
